Mother’s Day is the best day for Breakfast in bed. Here is an easy and healthy option your kiddies/husband/friend can serve you!
BAKED EGGS WITH FETA
- Olive oil, to grease
- 4 eggs
- 30g feta, crumbled
- 40g spring onions, ends trimmed, thinly sliced
- 2 tbsp. finely chopped fresh chives
- Salt & freshly ground black pepper
- 1 Avocado, sliced
- 4 slices sourdough toast (or bread of choice)
- Preheat oven to 200°C. Brush ovenproof dish with oil to lightly grease. Crack eggs into dish. Sprinkle with feta, spring onion and chives. Season with salt and pepper.
- Bake in preheated oven for 10 minutes or until eggs are cooked to your liking.
- Serve on top of toast, topped with avocado.
