Mother’s Day  is the best day for Breakfast in bed. Here is an easy and healthy option your kiddies/husband/friend can serve you!


Serves: 4 


  • Olive oil, to grease  
  • 4 eggs  
  • 30g feta, crumbled  
  • 40g spring onions, ends trimmed, thinly sliced  
  • 2 tbsp. finely chopped fresh chives  
  • Salt & freshly ground black pepper  
  • 1 Avocado, sliced
  • 4 slices sourdough toast (or bread of choice)


  1. Preheat oven to 200°C. Brush ovenproof dish with oil to lightly grease. Crack eggs into dish. Sprinkle with feta, spring onion and chives. Season with salt and pepper. 
  2. Bake in preheated oven for 10 minutes or until eggs are cooked to your liking.  
  3. Serve on top of toast, topped with avocado.
