The festive period often brings with it excess food and drink and can leave us feeling bloated, fatigued and possibly a little larger in the belly 🙂
This salad is light and refreshing, great to cleanse the body. I love the dressing!
• 100g mixed salad leaves
• ½ cucumber diced
• 100g snow peas
• 100g red capsicum, diced
• 1 tbsp. pumpkin seeds
• 1 tbsp. sunflower seeds
• ½ carrot, grated
• 180g chicken or salmon
• 60ml apple cider vinegar
• Wasabi powder, to taste (optional)
• Lime juice to taste
• 30ml virgin olive oil
1. Prepare dressing by placing all ingredients in a blender or shake in a protein shaker
2. Place all salad ingredients in a bowl and toss together.
3. Drizzle with salad dressing just before serving.
