This is the perfect summer salad! Refreshing, easy and light.
1/3 cup extra virgin olive oil
2 tbsp balsamic vinegar
2 tsp Dijon mustard
Freshly ground black pepper
250g haloumi, drained, sliced
Olive oil cooking spray
120g baby spinach
250g punnet strawberries, hulled, halved
¼ cup pistachios or sliced almonds
1 tbsp snipped fresh chives
1. Whisk oil, vinegar and mustard in a jug. Season with salt and ground black pepper. Set aside. Alternatively use your handy protein shaker instead of a whisk and jug! Great to store it if travelling also.
2. Heat a pan over high heat. Spray halloumi with oil. Chargrill for 1-2 minutes each side or until golden. Transfer to a plate.
3. Place spinach and rocket in a large bowl. Add the strawberries, pistachios or almonds, halloumi and chives. Toss until well combined.
4. Add the dressing to salad just before serving.
