Try this delicious curry to give your immune system a boost. You can swap the veggies for anything you have in your fridge and even add chicken or beef for the meat eaters in the family.

(Serves 4 – 6)

Ingredients
1 teaspoon turmeric powder
1 tablespoon dried coriander
1 teaspoon dried umin
2 teaspoons sweet paprika
2-3 teaspoons mild curry powder
1 tablespoon ginger – peeled and grated (or 1 teaspoon dried)
4 tablespoons coconut oil
1 onion – chopped
2 cloves of garlic
1 cinnamon stick
1 can coconut cream
1 can diced tomatoes
500mL stock of choice
2 tablespoons apple cider vinegar
1 head of cauliflower – chopped
1 sweet potato – cubed
2 carrots – chopped
1 tin chickpeas – washed
½ cup sultanas
2 cups of rice or quinoa – cooked to serve

Method
1. Combine ginger and all dried herbs (except cinnamon stick) in a small bowl
2. Saute onions and garlic with coconut oil in large saucepan until soft

3. Add bowl of dried herbs and stir briefly
4. Add all other ingredients and stir so that the liquid is covering the vegetables as much as possible
5. Cover saucepan and bring to the boil
6. Remove lid and simmer stirring occasionally until vegetables are cooked to desired firmness
7. Serve with quinoa or rice
